Creamy Garlic Mushroom Toast

Ingredients

·         1 tsp  rapeseed oil

·         80g/3oz button mushrooms, roughly chopped

·         32g/1oz reduced-fat smoked bacon medallion, roughly chopped,

·         spring onions, thinly sliced

·         1 garlic clove, finely chopped

·         ½ small lemon juice only

·         1 level tbsp half-fat crème fraiche

·         30g/1oz slice whole meal or granary bread

·         salt and freshly ground black pepper to taste

 



How to Prepare

 

1.      Heat the oil in small frying pan over a medium heat. Add the mushrooms, bacon, spring onions and garlic and cook for 1–2 minutes. Add the lemon juice, then cover with a lid and cook over a low heat for 5 minutes, or until the mushrooms are cooked.

2.      Remove from the heat, stir in the crème fraîche and chives, if using, and season.

3.      Toast the bread on both sides, place on a warmed plate and top with the mushrooms.

 

 

Thai Green Papaya Salad


Ingredients

 

·         1 medium green papaya about 4 cups shredded

·         1/2 a cucumber

·         2 handfuls cherry tomatoes

·         3 green onions

·         12 green beans

·         1 or 2 Thai red chili peppers*

·         1/2 cup Thai basil leaves washed and packed

·         1/4 cup fresh lime juice

·         2 tbsp fish sauce

·         1 tbsp coconut aminos

·         2 tbsp dried shrimp optional

·         Cashews and cilantro for garnish


 

How to Prepare

 

1.      Peel the papaya with a sharp knife. Julienne the flesh using a julienne peeler (as I did) or use a box grater to achieve a similar effect.

2.      Juice the limes and pour over the veggies. Hint: Roll your limes on the counter prior to squeezing to help release the juice.

3.      Add fish sauce, coconut aminos and (optional) a drizzle of honey.

4.      If you prefer, add the dried shrimp and then let sit for 30 min for all the flavors to meld. Garnish with chopped cashews and cilantro prior to serving. Serve straight up or as a delicious side dish to grilled chicken or fish.

Pasta Primavera


Ingredients

·         Butter & Oil for the light sauce

·         Zucchini

·         Peas

·         Bell pepper (use whatever color you prefer)

·         Little tomatoes (grape or cherry work well)

·         Carrots (I slice it very thin into ribbons so it cooks fast)

·         Garlic

·         Fresh lemon juice

·         Italian seasoning (the dried herb blend you can find in the herb/spice aisle)

·         Fresh basil

·         Parmesan cheese

 



How to Prepare

1.      Prep your ingredients (chop the veggies and grate that cheese!).

2.      Add the oil and butter to a skillet over medium-high heat.

3.      Once the pan is hot, add the vegetables and garlic and sauté, stirring often, for about 5 minutes until the vegetables are tender-crisp.

4.      Stir in the lemon juice, Italian seasoning, and basil.

5.      Before draining the pasta, add a splash of the pasta water (a tablespoon or two) to the skillet. Drain the pasta and add it to the pan and toss. Just before serving, stir in the parmesan cheese.

 

Buffalo Chicken Wings

 

Ingredients

Chicken Wings

·         1 Tsp cornstarch 

·         1/2 tsp paprika 

·         1/2 tsp smoked paprika 

·         1/2 tsp garlic powder

·         1/4 tsp onion powder 

·         1/8 tsp cayenne pepper 

·         1/4 tsp freshly cracked black pepper 

·         1/2 tsp salt 

·         1 Tbsp cooking oil 

·         2.5 lbs. chicken wings or drumettes

Buffalo Sauce

·         4 Tbsp butter 

·         1/2 cup Frank’s Redhot Sauce 

·         1 tsp Worcestershire sauce 

·         1/2 tsp garlic powder

 



How to Prepare

 

1.                  Preheat the oven to 400ºF. In a small bowl, combine the cornstarch, paprika, smoked paprika, garlic powder, onion powder, cayenne, pepper, and salt.

2.      Pat the wings dry, then place them in a bowl. Drizzle the cooking oil over top, then toss until the wings are coated in oil. Add the cornstarch-seasoning mixture, then toss to coat again.

3.      Line a baking sheet with parchment paper for easy cleanup, then place wire cooling racks on top. Place the seasoned chicken wings on the wire racks with space between each wing.

4.      Bake the wings for 30 minutes, then flip and bake for 20-25 minutes, or until the wings have achieved the amount of browning desired (this will depend on the size of your wings).

5.      While the wings are in the oven, melt the butter in a small saucepot over medium heat, then add the remaining ingredients (hot sauce, Worcestershire, garlic powder).

6.      Transfer the wings to a large bowl. Pour the sauce over the wings and toss until fully coated.

 

Chicken Souvlaki


Ingredients

  • 1 1/2 lb boneless skinless chicken tenders
  • 2 tbsp freshly squeezed lemon juice
  • 1½ tbsp extra virgin olive oil
  • 1 clove garlic, , minced
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ½ tsp black pepper


How to Prepare

  1. Place the chicken in a resealable bag. In a small bowl, whisk together the lemon juice, olive oil, garlic, oregano, kosher salt and black pepper until well combined. Pour over the chicken, seal the bag and marinate for at least 3 hours.
  2. Preheat the oven to 375 degrees with a grill pan in the oven. Once hot, add the chicken and cook, turning once, for 20-25 minutes, until cooked through. Remove from the oven carefully.
